Ceremonial grade is the highest quality of matcha - made from first harvest, shade-grown leaves, stone-ground into an extremely fine powder. It has a naturally sweet flavour, vivid jade green colour, and minimal bitterness. It is the grade traditionally used in Japanese tea ceremonies, and it is smooth enough to enjoy on its own.

Our matcha is sourced from Japan. It is first harvest, shade-grown for 3–4 weeks before picking, and stone-ground to order.

Each 70g Aceae pouch contains 20 serves, based on 1 heaped teaspoon (approximately 3.5g) per serve.

Lemon Myrtle (Backhousia citriodora) is an Australian native tree with a citrus character more intense than lemon itself, and it has been valued by First Nations Australians for thousands of years. In our blend it adds a clean, citrus bright lift that makes the matcha exceptional over ice.

Strawberry Gum (Eucalyptus olida) is an Australian native eucalyptus from the New England Tableland of New South Wales. Despite being a eucalyptus, it has a warm, subtly fruity character, with notes of strawberry, dried rose, and something gently spiced. It adds a warming, grounding dimension to the matcha.

We use Australian honey in our Vanilla and Honey blend to round the natural bitterness of matcha into something smooth and comforting. It is the blend where Aceae began: ceremonial grade matcha, Australian honey, and a touch of vanilla.

Hot: sift one heaped teaspoon (3.5g) into a bowl, add 50ml of water at 80°C (not boiling), and whisk in a zigzag (W or M) motion until smooth and frothy. Pour into 180 to 240ml of hot milk or water.
Iced latte: whisk with a splash of water, then pour over ice and cold milk.

A traditional bamboo chasen (matcha whisk) gives the best result. A small electric milk frother is a practical alternative. A regular whisk will work in a pinch - but sifting first becomes even more important.

Oat milk is our favourite for iced lattes - its natural sweetness complements the matcha without masking it. Almond milk is clean and light. Coconut milk is rich and tropical - excellent with the Strawberry Gum blend. Full-cream dairy milk is classic and works beautifully for hot lattes.
