Lemon myrtle (Backhousia citriodora) grows in the subtropical rainforests of Queensland and has been part of First Nations Australian food culture for thousands of years. It carries more citral, the compound behind lemon’s distinctive aroma, than lemon itself. When we blended it with our ceremonial grade matcha, the brightness lifted the earthiness of the matcha into something we could not stop drinking. Bright, aromatic, and unmistakably Australian. This is our boldest blend.

Japanese ceremonial grade matcha, monk fruit, and lemon myrtle powder (Backhousia citriodora). 70g / 20 serves.

Sift 3.5g (1 heaped tsp) into a bowl.
Add 50ml / 2oz hot water at 80°C / 176°F.
Whisk in a zigzag motion until frothy and smooth.
Pour into 180–240ml / 6–8oz of your preferred plant-based milk.
Enjoy your latte.
Over ice: whisk with a splash of water, pour over ice, top with chilled milk. Blended: add one serve to a smoothie.
